Vegan Dirty Rice

This no-fuss meal is packed full of flavor and is a cinch to make.  It’s perfect for any busy weeknight and is sure to be loved by the pickiest of eaters in your family.  In this dish, I use Impossible Spicy Sausage, but feel free to use pork or chicken sausage as an alternative.  Just make sure the ground meat you choose is well spiced with the usual suspects (onion powder, garlic powder, cayenne, chili powder, salt, thyme and oregano). And, if you’ve never tried Impossible Spicy Sausage, I recommend you give it a try.  I love it and find it to be a great alternative to meat. Is it healthy?  Probably not, but what sausage is?  We’re going for flavor here people, not a low-cal/low-salt meal!

To make this dish, start by heating up a few tablespoons of olive oil in a large skillet.  Add one cup of finely chopped onion, one cup of finely chopped celery and 14 ounces of Impossible Spicy Sausage and cook for about 5 minutes.  If using regular sausage, sauté the ingredients until the meat is cooked through.

Next, stir in two cups of cooked brown rice and the following spices: ¼ teaspoon of cayenne, 1 teaspoon of smoked paprika, 1 teaspoon of dried thyme, 1½ teaspoons of Diamond brand kosher salt, ½ teaspoon of black pepper and 1 teaspoon of garlic powder.  Stir, cooking the rice dish for an additional 3-5 minutes.  Finish the dish with 2 tablespoons of chopped fresh parsley and serve.  This recipe feeds 4.

  • 1 tsp garlic powder
  • 2 tbsp fresh parsley, chopped

    I was tired of using the Impossible spicy sausage in pasta recipes – this recipe is awesome! I went super lazy and made it in the Instant Pot with Great Value frozen seasoning blend for the veggies. It came together so fast and tastes delicious! Thank you!
