Wash and coarsely chop lettuce. Set aside.
Thaw frozen peas in 3 cups of lukewarm water. Drain and set aside.
Finely slice scallions. Set aside.
Fry and chop bacon. Set aside.
Shred one cup of cheddar cheese. Set aside.
To assemble salad, pack lettuce into the bottom of a trifle dish or steep sided clear glass bowl.
Next, sprinkle scallions, then thawed peas over lettuce.
Dollop mayonnaise over top of the peas and spread out evenly so that all peas are covered and the salad layers are sealed in.
Sprinkle one tablespoon of sugar over top of the mayonnaise, then sprinkle with cheese and lastly bacon.
