Preheat the oven to 350°F.
In a large mixing bowl, combine the oats, spices, baking powder, pumpkin seeds, brown sugar and salt. Set aside.
In another bowl, whisk together the pumpkin puree, almond milk, vanilla and olive oil.
Add the wet ingredients to the dry ingredients and mix until just combined.
Grease an 8"x 8" glass pan with olive oil then pour the oat mixture into the pan, spreading the mixture out evenly.
Bake the oats for 45 minutes or until golden brown.
Allow the baked oatmeal to cool slightly before slicing into squares. Drizzle the baked oatmeal with a bit of almond milk and maple syrup. Enjoy!
