Preheat the oven to 350° F.
Grease a 9"x3" baking pan with butter and set aside.
In a medium sized bowl, mash the bananas with the back of a fork until creamy.
Whisk in eggs, vanilla, butter and sugar.
In a separate, larger bowl, add cinnamon, nutmeg, salt, flours, baking powder and baking soda. Mix to combine.
Add wet ingredients to the dry ingredients and mix until just combined. Pour the batter into the prepared pan and sprinkle the top with 1½ tablespoons of coarse sugar.
Bake the bread for 50-60 minutes or until a toothpick inserted into the center of the bread comes out clean.
Allow the bread to cool for 5 minutes in the pan, then tip the bread out onto a wire rack to cool completely.
