Preheat the oven to 350°F. Butter a 10-inch cast iron skillet and set aside.
In a large bowl, gently mix the peeled, sliced peaches together with the cornstarch, sugar, lemon juice, cinnamon and salt. Pour the peaches into the prepared skillet and set aside.
In a separate, large bowl, mix together the oats, hemp seeds, flour, salt, spices and sugar. Using your hands, work in the soft butter until the dry ingredients are coated and moist.
Scatter the crumb topping over the peaches, then pop the crisp into the oven to bake for 30 minutes or until the peaches are bubbly and the crisp topping is golden brown.
Allow to cool before serving. Enjoy!
