Roasted Radish Dip

Ingredients

  • 2 bunches of radishes (about two dozen radishes)
  • ½ tsp olive oil
  • ¼ tsp salt + ¼ teaspoon salt, divided
  • 1 tbsp chopped cilantro
  • 1 tbsp minced jalapeno
  • cup mayonnaise
  • cup Greek yogurt

Instructions

  • Wash, trim and halve radishes. Place on a baking sheet and drizzle with olive oil and a pinch of salt.
  • Roast the radishes at 425°F for approximately 20 minutes or until golden brown and tender. Flip the radishes halfway through roasting to ensure even browning.
  • Allow the radishes to cool, then puree in a blender of food processor.
  • Add the remaining ingredients and salt and puree until smooth. Pour the dip into a bowl and serve with raw vegetables, crackers or pretzels. Enjoy!
