Apple, Bacon and Cheddar Fritters

Ingredients

  • 2 apple, chopped into bite-size pieces
  • 1 tbsp butter (plus 2-3 additional tbsps. for frying)
  • 4 tbsp brown sugar (divided)
  • 2 tsp cinnamon (divided)
  • ½ tsp fresh lemon juice
  • 2 eggs
  • 1 cup buttermilk
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼ tsp nutmeg
  • ¾ cup cooked bacon, diced
  • 1 cup sharp cheddar cheese, shredded
  • powdered sugar

Instructions

  • Wash, peel, core and chop two apples into bite-size pieces.
  • Add apples to a frying pan along with butter, 1 tbsp brown sugar, 1 tsp cinnamon and lemon juice.
  • Sauté for about 12-15 minutes or until the apples are soft. Set aside to cool.
  • Fry bacon and chop into bite-size pieces. Set aside.
  • In a small bowl, whisk together eggs and buttermilk. Set aside.
  • In a separate, larger bowl, mix all-purpose flour, baking powder, baking soda, remaining brown sugar, salt, remaining cinnamon and nutmeg. Add the sautéed apples, bacon and shredded cheese and mix until all the ingredients are evenly distributed.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Melt 1 tablespoon of butter in a skillet and add 3-4 separate dollops of fritter batter to the pan (about ¼ cup of batter per fritter). Be sure not to overcrowd the pan.
  • Fry fritters on each side until golden brown and cooked through; about 3-4 minutes per side.
  • Sprinkle the fritters with powdered sugar and serve immediately.
