Apple, Bacon, and Cheddar Fritters

Break from standard pancakes or waffles and make these fritters for breakfast instead!  These fritters are just as easy to make, but so much better to eat.  Served with a dusting of powdered sugar, these fritters are a great combination of sweet and salty.

To start, wash, peel and core two apples. Chop the apples into small, bite-size pieces and add to a frying pan along with one tablespoon of butter, one tablespoon of brown sugar, one teaspoon cinnamon and ½ tablespoon of fresh lemon juice.  Sauté apples for about 12-15 minutes or until soft. Set aside to cool.

While the apples are sautéing, fry 8-10 slices of bacon until crisp. Place bacon on a plate that has been lined with paper towels to absorb any excess grease. Let bacon cool, then chop into small bite-size pieces. Set aside.

In a small bowl, whisk together two eggs with one cup of buttermilk. Set aside. In a separate, larger bowl, mix 1 ½ cups all-purpose flour, 1 ½ teaspoon baking powder, ½ teaspoon baking soda, 3 tablespoons brown sugar, ¼ teaspoon salt, one teaspoon cinnamon and ¼ teaspoon nutmeg. Add the sautéed apples, ¾ of chopped bacon (and secretly eat whatever is leftover), and one cup of shredded sharp cheddar cheese. Mix until all ingredients are evenly distributed. Add the wet ingredients to the dry ingredients and mix until just combined.

Melt 1 tablespoon of butter in a skillet and add three or four dollops of fritter batter to the pan (about ¼ cup of batter per fritter). Be sure not to overcrowd the pan. Fry fritters on each side until golden brown and cooked through; about 3-4 minutes per side. When cooked through, place fritters on a plate and repeat until all fritters have been cooked. Sprinkle fritters with powdered sugar and serve immediately.

  • 1 cup sharp cheddar cheese, shredded

Instructions
