Preheat the oven to 350°F.
Wash 4 apples and cut the tops off the apples like you would a jack-o-lantern. Scoop out the seeds and core of each apple.
Crumble ginger snap cookies into each apple, filling the cavity of each apple to the top.
Sprinkle over 1½ teaspoons of brown sugar and a pinch of cinnamon.
Top each apple with ½ tablespoon of butter.
Place the stuffed apples into an 8"x8" glass baking dish. Bake the apples for 45-50 minutes until tender and fragrant.
Top each apple with a large scoop of vanilla ice cream and serve immediately. This recipe makes 4 servings.
