Chicken Ciabatta Sandwich with Pickled Strawberries

Ingredients

  • 4 ciabatta rolls
  • 4 tbsp mayonnaise
  • 2 chicken breasts from a rotisserie chicken
  • 4 large slices of aged cheddar cheese
  • handful of arugula
  • handful of microgreens
  • ΒΌ cup pickled strawberries

Instructions

  • If you don't have them on hand, make the pickled strawberries using this recipe.
  • Halve and toast four ciabatta rolls. Set aside.
  • Wash the arugula and microgreens and set aside.
  • Slice the cheddar cheese and chicken breasts into thin slices and set aside.
  • To assemble a sandwich, spread a thin layer of mayonnaise onto the inside of half a ciabatta roll. Top with slices of cheese, then chicken. Top with the arugula and microgreens, then a healthy portion of pickled strawberries. Add the top to the sandwich and repeat until all four sandwiches are assembled. These sandwiches make a great lunch or light dinner on a hot evening. Enjoy!
