My Chicken Ciabatta Sandwich with Pickled Strawberries could not be any more delicious. This sandwich is bakery-level quality yet comes together in no time at all thanks to a few store-bought ingredients. Here, soft ciabatta rolls are piled high with perfectly brined rotisserie chicken, spicy arugula, delicately sweet microgreens, tangy aged cheddar cheese and acidic yet subtly sweet Pickled Strawberries. This sandwich hits all the right flavors and textures and will leave you completely satisfied. It’s a perfect workday lunch or light dinner on those evenings when it’s just too darn hot to cook.

Next, cut the breast meat off of one store-bought rotisserie chicken, then slice it into thin medallions against the grain. Set aside. Wash a handful of fresh arugula and a handful of microgreens and set aside. Next, thinly slice enough cheddar cheese for four sandwiches. Set aside.
To assemble a sandwich, spread one tablespoon of mayonnaise on half a toasted ciabatta roll. Top with slices of cheese then chicken, followed by a healthy serving of arugula and microgreens. Spoon on a few slices of pickled strawberries, then add the top bun. Repeat for the three other sandwiches. Serve immediately and enjoy!
Chicken Ciabatta Sandwich with Pickled Strawberries
Ingredients
- 4 ciabatta rolls
- 4 tbsp mayonnaise
- 2 chicken breasts from a rotisserie chicken
- 4 large slices of aged cheddar cheese
- handful of arugula
- handful of microgreens
- ¼ cup pickled strawberries
Instructions
- If you don't have them on hand, make the pickled strawberries using this recipe.
- Halve and toast four ciabatta rolls. Set aside.
- Wash the arugula and microgreens and set aside.
- Slice the cheddar cheese and chicken breasts into thin slices and set aside.
- To assemble a sandwich, spread a thin layer of mayonnaise onto the inside of half a ciabatta roll. Top with slices of cheese, then chicken. Top with the arugula and microgreens, then a healthy portion of pickled strawberries. Add the top to the sandwich and repeat until all four sandwiches are assembled. These sandwiches make a great lunch or light dinner on a hot evening. Enjoy!
