Wash, then chop two generous cups of broccoli into small florets.
Pour one tablespoon of olive oil into a large skillet and heat over high heat. Add the broccoli to the hot pan and cook until crispy brown, about five minutes.
Add the water and salt to the pan, cover and let cook until the broccoli is tender and the water has evaporated, about three minutes. Remove broccoli from the heat.
Shred cheddar cheese.
Place two tortillas on a cutting board or plate and divide the broccoli and cheese between the two rounds. Top with the remaining two tortillas.
Using the same skillet, heat up one teaspoon of olive oil and cook the quesadilla until golden brown on both sides. Repeat with the second quesadilla.
Slice the quesadillas into quarters and enjoy! This recipes serves two.
