Caramelized broccoli and melty cheddar cheese are folded into layers of toasted flour tortillas for a quick lunch or dinner that is anything but standard. My Crispy Broccoli Quesadillas may be simple, but they are oh so good.

Scatter the broccoli into a hot pan that has been coated with one tablespoon of olive oil. Cook the broccoli over high heat for about five minutes or until dark brown on the edges. Next, add ¾ cup of water and ¼ teaspoon of salt to the pan. Cover the pan and cook the broccoli for an additional 3 minutes or until all the water has evaporated from the pan and the florets are tender. Remove from heat.
Shred ¾ of a cup of cheddar cheese and grab four 10-inch flour tortillas. Arrange two tortillas on a cutting board and divide the cheddar cheese and charred broccoli between the rounds. Top with the remaining two tortillas. Cook each quesadilla in a hot pan that has been coated with one teaspoon of olive oil until golden brown on both sides. Slice the quesadillas into quarters and enjoy! This recipe serves two.
Crispy Broccoli Quesadilla
Ingredients
- 2 cups broccoli
- 1 tbsp olive oil, plus 2 teaspoons (divided)
- ¾ cup water
- ¼ cup kosher salt
- ¾ cup shredded cheddar cheese
- 4, 10-inch flour tortillas
Instructions
- Wash, then chop two generous cups of broccoli into small florets.
- Pour one tablespoon of olive oil into a large skillet and heat over high heat. Add the broccoli to the hot pan and cook until crispy brown, about five minutes.
- Add the water and salt to the pan, cover and let cook until the broccoli is tender and the water has evaporated, about three minutes. Remove broccoli from the heat.
- Shred cheddar cheese.
- Place two tortillas on a cutting board or plate and divide the broccoli and cheese between the two rounds. Top with the remaining two tortillas.
- Using the same skillet, heat up one teaspoon of olive oil and cook the quesadilla until golden brown on both sides. Repeat with the second quesadilla.
- Slice the quesadillas into quarters and enjoy! This recipes serves two.
