To start, wash then chop two generous cups of broccoli into small florets.  Scatter the broccoli into a hot pan that has been coated with one tablespoon of olive oil. Cook the broccoli over high heat for about five minutes or until dark brown on the edges.  Next, add ¾ cup of water and ¼ teaspoon of salt to the pan. Cover the pan and cook the broccoli for an additional 3 minutes or until all the water has evaporated from the pan and the florets are tender.  Remove from heat.

Crispy Broccoli

Shred ¾ of a cup of cheddar cheese and grab four 10-inch flour tortillas. Arrange two tortillas on a cutting board and divide the cheddar cheese and charred broccoli between the rounds.  Top with the remaining two tortillas.  Cook each quesadilla in a hot pan that has been coated with one teaspoon of olive oil until golden brown on both sides. Slice the quesadillas into quarters and enjoy!  This recipe serves two.
