Preheat the oven to 325°F and line a baking sheet with parchment paper.
In a large bowl, mix dry ingredients and spices. Set aside.
In a separate bowl, whisk canola oil, vanilla, and maple syrup.
Pour oil mixture into oatmeal mixture and mix until well combined.
Place granola onto a sheet pan and spread out evenly. Bake for 30 to 35 minutes or until golden. Stir every five minutes to ensure that granola browns evenly.
Serve with milk or yogurt. Store uneaten granola in a glass jar. It will keep well for about one week.
