I made a pumpkin pie from scratch the other day and wound up with a bunch of pumpkin seeds that I couldn’t bring myself to toss into the compost. So, I decided to roast them with a little olive oil and salt. These seeds are good on their own, but even better in your morning granola. Pumpkin seeds are an excellent source of magnesium, zinc, iron, and protein, and combined with the other seeds and oats in this recipe, this granola is bound to keep you going all morning long.

In a large bowl, mix 2 cups of oatmeal, ½ cup of hemp seeds, 1 cup of raw or roasted pumpkin seeds, 2 tablespoons of chia seeds, ½ teaspoon of salt, 2 teaspoons of cinnamon, ¼ teaspoon of nutmeg, ⅛ teaspoon of clove, and ⅛ teaspoon of ginger.
In a separate bowl, whisk ⅓ cup of canola oil, 1 teaspoon of vanilla, and ⅓ cup of maple syrup. Pour oil mixture into oatmeal mixture and mix until well combined. Dump granola onto a sheet pan and spread out evenly. Bake for 30 to 35 minutes or until golden. Stir every five minutes to ensure that granola browns evenly.
Serve with milk or yogurt. Store uneaten granola in a glass jar. It will keep well for about one week.
