Spiced Apple Granola

Ingredients

  • 2 cups oatmeal
  • ½ cup hemp seeds
  • ¾ cup raw chopped pecans
  • 2 tbsp chia seeds
  • ½ tsp salt
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • tsp clove
  • tsp ginger
  • ¼ cup canola oil
  • 1 tsp vanilla
  • ¼ cup maple syrup
  • 1 ½ cups dehydrated apple rings (optional)

Instructions

  • Preheat the oven to 325°F and line a baking sheet with parchment paper.
  • In a large bowl, mix dry ingredients and spices. Set aside.
  • In a separate bowl, whisk canola oil, vanilla, and maple syrup.
  • Pour oil mixture into oatmeal mixture and mix until well combined.
  • Place granola onto a sheet pan and spread out evenly. Bake for 30 to 35 minutes or until golden. Stir every five minutes to ensure that granola browns evenly.
  • When the granola is done baking, roughly chop about 15 dehydrated apple rings, or about 1 ½ cups, and add to the granola. If you do not have dehydrated apple rings on hand, you can always chop a fresh apple into your granola prior to eating.
  • Serve with milk or yogurt. Store uneaten granola in a glass jar. It will keep well for about one week.
