With 60 pounds of apples in my house thanks to Kiyokawa Family Orchard, I’ve been inspired to come up with all sorts of new ways to cook with apples. This granola recipe makes use of my dehydrated apples (see recipe here) and a whole host of nutrient-rich seeds, nuts and oats. This granola is heart-healthy and loaded with fiber to keep you going all morning long. It’s perfect served with Greek yogurt or with milk or a milk alternative. To make this gluten free, be sure to use oats that have been processed in a gluten free facility.
Thank you for reading this post, don't forget to subscribe!To make the granola, preheat the oven to 325°F and line a baking sheet with parchment paper. Set aside. In a large bowl, mix 2 cups of oatmeal, ½ cup of hemp seeds, ¾ cup of raw chopped pecans, 2 tablespoons of chia seeds, ½ teaspoon of salt, 2 teaspoons of cinnamon, ¼ teaspoon of nutmeg, ⅛ teaspoon of clove, and ⅛ teaspoon of ginger.
In a separate bowl, whisk ¼ cup of canola oil, 1 teaspoon of vanilla, and ¼ cup of maple syrup. Pour oil mixture into oatmeal mixture and mix until well combined. Dump granola onto a sheet pan and spread out evenly. Bake for 30 to 35 minutes or until golden. Stir every five minutes to ensure that granola browns evenly.
When the granola is done baking, roughly chop about 15 dehydrated apple rings, or about 1 ½ cups, and add to the granola. If you do not have dehydrated apple rings on hand, you can always chop a fresh apple into your granola prior to eating. Serve with milk or yogurt. Store uneaten granola in a glass jar. It will keep well for about one week.

- 1 ½ cups dehydrated apple rings (optional)
Instructions

- Pour oil mixture into oatmeal mixture and mix until well combined.
