Dice the ham and add it to a medium-sized bowl along with the chopped scallions, cilantro and plum sauce. Stir until combined.
Shred cheese and set aside.
Working in batches, heat up one tablespoon of olive oil in a large skillet.
While the pan is heating, assemble the first quesadilla. Sprinkle ¼ cup of cheese over one flour tortilla, top it with half of the ham mixture, then another ¼ cup of cheese. Top the quesadilla with another flour tortilla.
Cook the quesadilla over medium heat until the cheese is melted and the tortillas are golden brown. Repeat, making the second quesadilla.
To serve, slice each quesadilla into 8 triangles. Top with kimchi and garnish with chopped cilantro and scallions. Enjoy!
