Sweet & Sour Quesadilla

Ingredients

  • 4, 8 -inch whole wheat tortillas
  • 4 oz deli ham, diced
  • cup chopped scallions
  • cup packed cilantro, chopped
  • 3 tbsp plum sauce (or jam)
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • kimchi
  • chopped scallions and cilantro for garnish

Instructions

  • Dice the ham and add it to a medium-sized bowl along with the chopped scallions, cilantro and plum sauce. Stir until combined.
  • Shred cheese and set aside.
  • Working in batches, heat up one tablespoon of olive oil in a large skillet.
  • While the pan is heating, assemble the first quesadilla. Sprinkle ¼ cup of cheese over one flour tortilla, top it with half of the ham mixture, then another ¼ cup of cheese. Top the quesadilla with another flour tortilla.
  • Cook the quesadilla over medium heat until the cheese is melted and the tortillas are golden brown. Repeat, making the second quesadilla.
  • To serve, slice each quesadilla into 8 triangles. Top with kimchi and garnish with chopped cilantro and scallions. Enjoy!
  • This recipes serves 2-4 people.
