These quesadillas are loaded with Asian-influenced ingredients, including scallions, cilantro, plum sauce and kimchi for a beautiful flavor combination that you wouldn’t expect sandwiched between two tortillas. And the best part is that you can have this meal on the dinner table in 10 minutes flat. No time to cook? No worries!
Thank you for reading this post, don't forget to subscribe!To start, dice 4 ounces of deli ham and add it to a medium-sized bowl, along with ⅓ cup of chopped scallions, ⅓ cup of chopped cilantro and 3 tablespoons of plum sauce or plum jam. Stir until well combined. Shred 1 cup of cheddar cheese and set aside.
Heat one tablespoon of olive oil in a large skillet over medium heat. While the pan is heating, assemble the first quesadilla. Sprinkle ¼ cup of cheese on top of one whole wheat tortilla, then spoon on half the ham mixture. Sprinkle on another ¼ cup of cheese, then top the quesadilla with a flour tortilla. Cook the quesadilla until the cheese is melted and bubbly and the tortillas are golden brown on each side. Repeat. To serve, slice each quesadilla into 8 triangles. Top with kimchi and chopped scallions and cilantro. Enjoy! This recipe serves 2-4 people.
Sweet & Sour Quesadilla
Ingredients
- 4, 8 -inch whole wheat tortillas
- 4 oz deli ham, diced
- ⅓ cup chopped scallions
- ⅓ cup packed cilantro, chopped
- 3 tbsp plum sauce (or jam)
- 1 cup shredded cheddar cheese
- 2 tbsp olive oil
- kimchi
- chopped scallions and cilantro for garnish
Instructions
- Dice the ham and add it to a medium-sized bowl along with the chopped scallions, cilantro and plum sauce. Stir until combined.
- Shred cheese and set aside.
- Working in batches, heat up one tablespoon of olive oil in a large skillet.
- While the pan is heating, assemble the first quesadilla. Sprinkle ¼ cup of cheese over one flour tortilla, top it with half of the ham mixture, then another ¼ cup of cheese. Top the quesadilla with another flour tortilla.
- Cook the quesadilla over medium heat until the cheese is melted and the tortillas are golden brown. Repeat, making the second quesadilla.
- To serve, slice each quesadilla into 8 triangles. Top with kimchi and garnish with chopped cilantro and scallions. Enjoy!
