Vegan Dirty Rice

Ingredients

  • 3 tbsp olive oil
  • 1 cup finely chopped onion
  • 1 cup finely chopped celery
  • 14 oz Impossible brand Spicy Sausage (or sub spicy pork sausage)
  • 2 cups cooked brown rice
  • ¼ tsp cayenne
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • tsp Diamond brand kosher salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp fresh parsley, chopped

Instructions

  • Heat a few tablespoons of olive oil in a large skillet. 
  • Add the onion, celery and Impossible Spicy Sausage and cook for about 5 minutes. If using regular sausage, sauté the ingredients until the meat is cooked through.
  • Next, stir in two cups of cooked rice and the spices and cook for an additional 3-5 minutes.  Finish the dish with 2 tablespoons of chopped fresh parsley and serve.
