Roasted Broccoli with Lemon

Roasted Broccoli with Lemon is a really simple and surprisingly really delicious side dish.  When roasted, the broccoli turns golden brown and toasty on the ends, which results in a nice nutty and earthy flavor.  The broccoli is then finished off with a squeeze of lemon and a dash of salt, brightening the flavors into something that is totally craveable.  My family loves broccoli cooked this way and I think yours will too!

Start by preheating the oven to 350 deg F.  Wash a large head of broccoli and trim it into bite-sized florets.  Place the broccoli onto a rimmed baking sheet and drizzle the florets with 1 tablespoon of olive oil and ½ teaspoon of kosher salt.  Toss the broccoli with your hands to coat the florets evenly in the salt and oil.  Place the pan of broccoli into the oven and roast for 20 minutes, stirring the broccoli halfway through the cooking process to ensure even browning.  When the broccoli is tender-crisp and adequately charred, remove it from the oven and immediately toss it with one tablespoon of fresh lemon juice.  Serve the broccoli while hot.

Ingredients

  • 1 large head of broccoli
  • 1 tbsp olive oil
  • ½ tsp kosher salt
  • 1 tbsp freshly squeezed lemon juice

Instructions

  • Preheat oven to 350°F.
  • Wash and trim broccoli into bite-sized pieces.
  • Layer broccoli onto a rimmed baking sheet and toss with one tablespoon of olive oil and ½ teaspoon of salt.
  • Roast broccoli for 20 minutes, stirring it halfway through the cooking process to ensure even browning.
  • When tender-crisp and adequately charred, remove broccoli from oven and immediately toss with one tablespoon of fresh lemon juice. Enjoy!
