Cherry Sorbet

Cherry Sorbet

This sorbet is so easy to make and requires only three ingredients – fresh (or frozen) sweet cherries, honey and lemon juice.  My Cherry Sorbet is sweet, silky and dairy-free; a great treat to cool down on a hot summer afternoon.

To start, wash and pit 4 generous cups of sweet cherries.  Frozen cherries work too, if you can’t find fresh fruit.  Add the cherries to a food processor along with ¼ cup of local honey and the juice of half a lemon.  Puree the ingredients until smooth.

Bowl of Cherries
Pour the sorbet mixture into an ice cream machine and churn for 15-20 minutes or until thick.  Eat immediately or pour the sorbet into a 9×3” metal loaf pan, cover with foil and freeze until ready to serve.  This recipe makes 4-6 servings.
