Walnut Burgers

This plant-based burger is outstanding. It’s made from a combination of oats and walnuts, with egg as the binder.

Years ago, I made this recipe for a friend who was convinced that I had mixed walnuts with ground beef to create the burgers. Little did he know that there was no meat in the burgers whatsoever. When I told him the truth, he was shocked; and that goes to show you just how tasty this recipe is (even if you aren’t vegetarian or vegan). 

These burgers have a great texture and are heart healthy too. In fact, multiple studies suggest that walnuts are a superfood, containing impressive amounts of healthy fats and anti-inflammatory compounds that aid in the support and function of the cardiovascular system. Walnuts are quite tasty too.  So, give these burgers a try for yourself. You’ll thank me and so will your heart.

To make these burgers, combine 1 cup of quick-cooking oats, ½ cup of finely chopped raw walnuts, ½ cup of finely chopped onion, 2 minced garlic cloves, 1 teaspoon of salt, 1 teaspoon ground sage, ¼ teaspoon pepper, 2 eggs and 3 tablespoons of water. Stir mixture with a fork to fully incorporate all ingredients. Walnuts are a bit tricky to chop finely with a knife.  I use the chopper to make this task easier.  Check it out on my Shop page.

In a large skillet, heat up 1 tablespoon of olive oil. Divide the burger mixture into fourths and shape each handful of mixture into a patty.

Plop the patties into the hot skillet, making sure there is plenty of room to maneuver the patties when they need to be flipped. Cook the burgers for about four minutes on the first side and then flip. You’ll need to be quick and confident about flipping these patties; the mixture will still be a little loose at this point. If the patties separate a little as you are flipping them over, just use your spatula to reshape the patties. Don’t worry. These patties will bind in the end without problem.

Cook the patties on the second side for about two minutes. Next, add ½ cup of water to the skillet and cover. Cook the burgers (covered) until all water has been absorbed, about 6 minutes. If you are topping these burgers with cheese, add the cheese in the last minute of cooking. It will melt beautifully.

Serve these patties over greens or on hamburger buns. Top with desired toppings and condiments and enjoy!

Ingredients

  • 1 cup quick cooking oats
  • ½ cup raw walnuts, finely chopped
  • ½ cup onions, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1 tsp ground sage
  • ¼ tsp black pepper
  • 2 eggs
  • 3 tbsp, plus ½ cup of water (divided)
  • 1 tbsp olive oil

Instructions

  • Combine oats, walnuts, onion, garlic, salt, spices, eggs and 3 tablespoons of water in a mixing bowl. Mix with a fork to combine.
  • In a large skillet heat 1 tablespoon of olive oil.
  • Divide hamburger mixture into fourths and shape into patties.
  • Place patties in hot skillet and cook for 4 minutes.
  • Flip patties and cook for an additional 2 minutes.
  • Add ½ cup of water to the pan and cover. Cook for about 8 minutes or until all water is absorbed.
  • If topping with cheese, add in the last minute of cooking.
  • Serve burgers over greens or on hamburger buns, topped with your favorite condiments and toppings. Enjoy!
