Start the new year off right with my healthy Overnight Chia Pudding. This pudding is sweet and creamy without loads of sugar or fat. It’s a nice departure from the holiday cookies and cakes that we’ve all been eating over the last few weeks. Chia seeds are a great source of omega-3 fatty acids, minerals and soluble fiber. They are also a complete protein. And, due to their water-absorbing capabilities, chia seeds will keep you feeling full longer, so they make for a wonderful late-day snack to tide you over until supper time. I love this pudding for breakfast, topped with raspberries or blueberries too.
Thank you for reading this post, don't forget to subscribe!To make this pudding, you will need a glass mason jar or similar container that has a tight-fitting lid. Add 4 ½ tablespoons of chia seeds to the jar along with 12 ounces of almond milk and 2 tablespoons of maple syrup. Screw the lid onto the jar and shake vigorously until the chia seeds are mixed throughout the almond milk. Place in the refrigerator for 15 minutes. After 15 minutes, take the jar out of the refrigerator and shake again to break up the chia seeds, as they will want to clump together. Place the jar back in the refrigerator and allow the chia seeds to absorb the almond milk and expand overnight or for at least four hours. This recipe makes two servings.
Overnight Chia Pudding
Ingredients
- 4½ tbsp chia seeds
- 2 tbsp maple syrup
- 12 ounces almond milk
Instructions
- Add ingredients to a glass mason jar (or similar container) with a tight-fitting lid.
- Seal the jar and shake vigorously until ingredients are well mixed.
- Place jar in the refrigerator for 15 minutes.
- After 15 minutes, shake jar again to break up the chia seeds that have started to clump together (this is normal). Place jar back in the refrigerator overnight or for at least four hours.
- Enjoy pudding topped with fresh fruit. Enjoy!
