In our household, Valentine’s Day means chocolate covered strawberries and we make them every year. They are delicious, healthy and a fun, safe activity to do with little ones. This year, we doubled up on the strawberry flavor by sprinkling our chocolate covered strawberries with crushed freeze-dried strawberries. What a great addition! This is a must from now on and something you should definitely try too. Bring on the strawberry!
Thank you for reading this post, don't forget to subscribe!To make, wash two pints of fresh strawberries and pat them dry with a clean kitchen towel (keep the strawberry stems attached). Set aside. Next take 1 ¼ cup of freeze-dried strawberries, place them in a resealable bag and crush them with a rolling pin. Set aside. Add 2 cups of 60% bittersweet chocolate chips and 1 tablespoon of coconut oil to a microwave safe bowl and, in a double boiler or microwave, slowly melt the chocolate until it’s smooth and glossy. Set aside. Note: Coconut oil is added to the chocolate to thin it out a little. It’s easier to coat the strawberries this way, but feel free to omit it if you’d like. It’ll work either way.
When ready, dip each strawberry in the chocolate, using a spoon to assist you along the way. Set coated strawberries on a baking sheet that has been lined with wax paper and sprinkle them with a pinch of crushed freeze-dried strawberries. Repeat until all strawberries have been prepared. Leave the strawberries on the counter for about 15 minutes to allow the chocolate to harden before serving. You can also place the strawberries in the refrigerator or freezer to speed up the hardening process. Enjoy and Happy Valentine’s Day to you all!
Chocolate Covered Strawberries with Strawberry Crumble
Ingredients
- 2 pints fresh strawberries
- 1¼ cups freeze-dried strawberries
- 2 cups 60% bittersweet chocolate chips
- 1 tbsp coconut oil
Instructions
- Wash and dry two pints of fresh strawberries and set aside.
- Next, place freeze-dried strawberries in a resealable baggie and crush with a rolling pin. Set aside.
- Melt chocolate chips and coconut oil in a double boiler or microwave until smooth and glossy. Set aside.
- Dip strawberries into the chocolate, then place on a baking sheet lined with wax paper. Sprinkle the berries with crush freeze-dried strawberries and repeat until all of the strawberries have been prepared.
- Let strawberries sit on the countertop or place in the refrigerator or freezer to harden before serving. Enjoy!
