Tomatoes and peaches make a surprisingly good pair. The peach brings out the tomato’s natural sweetness, mellowing its acidity and matching its vibrant and juicy texture. Blend the two with a knob of creamy, fresh mozzarella, fresh basil and a sweet, aged balsamic vinaigrette and you’ve got a lovely summer salad on your hands. Thank you for reading this post, don't forget to subscribe!To start, chop one large peach, 3 medium to large heirloom tomatoes and 8 ounces of fresh mozzarella cheese into bite sized pieces. Layer the chopped ingredients onto a large plate and sprinkle with torn basil, about 6 large leaves. Drizzle the salad with a sweet and syrupy aged balsamic vinegar, such as Ponti or, if in the Hood River area, Arome’s Denissimo 18-year aged balsamic vinegar. Finish with a flaky Maldon salt or other coarse salt. Enjoy.
Caprese Salad with Peaches
Ingredients
- 1 large peach
- 3 medium to large heirloom tomatoes
- 8 oz fresh mozzarella
- 6 fresh basil leaves, torn
- aged balsamic vinegar
- Maldon salt
Instructions
- Chop the peach, tomatoes and mozzarella cheese into bite-sized pieces.
- Scatter the chopped ingredients on a large plate and sprinkle with the torn basil leaves.
- Drizzle the salad with a good amount of aged balsamic vinegar and finish with a pinch of flaky Maldon salt. Enjoy!
