Ham and Gruyere Cheese Quesadilla with Apple and Arugula

These quesadillas are anything but boring. They are perfect as a midweek lunch, or quick dinner when you find life is too busy to cook an elaborate meal. The whole family will love this one. Feel free to switch the gruyere out for cheddar cheese if you have picky little ones in the house. Either cheese works well in this recipe.

Ham and Gruyere Cheese Quesadilla with Apple and Arugula

Ingredients

  • 1 large tart apple, Granny Smith or similar
  • 1 tbsp. butter
  • 4 nine inch whole wheat tortillas
  • 5 ounces Gruyere cheese, shredded
  • 5 ounces thinly sliced deli ham
  • 1 ½ cups arugula, chopped
  • 2 tsp. olive oil

Instructions

  • Wash, core and slice apple into quarter inch slices. Wash and roughly chop arugula.
  • Melt butter in pan and add apple slices and arugula. Cover. Sautée over medium heat until apples are soft and arugula is wilted, about 10 minutes.
  • While the apples and arugula cook, grate gruyere cheese and set aside
  • To assemble, arrange two tortillas on a cutting board. Sprinkle each with half the gruyere cheese, then top with ham, arugula and apples. Sprinkle with remaining cheese and top with the remaining two tortillas.
  • Heat pan with 1 teaspoon of oil and cook one quesadilla at a time until tortillas are golden brown and cheese is melted. Repeat with the other teaspoon of oil and quesadilla.
  • Cut into wedges and eat immediately. Serves two.
