Similar to garlic, radishes lend themselves well to roasting. When roasted, the radishes mellow becoming tender, creamy and sweet; a far departure from their raw state. Roasted radishes are great in salads, on top of pizzas or in sandwiches, but I absolutely love them in my Roasted Radish Dip. This dip is sweet, creamy and complex in flavor. It’s a wonderful, healthy little dip that welcomes all sorts of dippable foods such as raw vegetables, crackers or pretzels. It also makes a great spread that can be used in place of mayonnaise on sandwiches or in wraps. What a delicious way to use up those garden radishes before the heat takes them!
To start, wash and trim two bunches of radishes (about 2 dozen radishes or so). Halve the radishes and place on a baking sheet. Drizzle with ½ teaspoon of olive oil and ¼ teaspoon of salt. Roast the radishes at 425 deg F for 10 minutes, flip and roast for another 5-10 minutes until golden brown and tender. Set the radishes aside to cool completely.
Once cooled, add the roasted radishes to a food processor or blender and puree until smooth. Next, add one tablespoon of chopped cilantro, one tablespoon of minced jalapeno, ⅓ cup of mayonnaise, ⅓ cup of greek yogurt and ¼ teaspoon of salt. Blend until smooth. Pour the dip into a bowl and serve with sliced or whole raw vegetables, crackers or pretzels. Enjoy!
Roasted Radish Dip
Ingredients
- 2 bunches of radishes (about two dozen radishes)
- ½ tsp olive oil
- ¼ tsp salt + ¼ teaspoon salt, divided
- 1 tbsp chopped cilantro
- 1 tbsp minced jalapeno
- ⅓ cup mayonnaise
- ⅓ cup Greek yogurt
Instructions
- Wash, trim and halve radishes. Place on a baking sheet and drizzle with olive oil and a pinch of salt.
- Roast the radishes at 425°F for approximately 20 minutes or until golden brown and tender. Flip the radishes halfway through roasting to ensure even browning.
- Allow the radishes to cool, then puree in a blender of food processor.
- Add the remaining ingredients and salt and puree until smooth. Pour the dip into a bowl and serve with raw vegetables, crackers or pretzels. Enjoy!
