Blistered Sugar Snap Peas with Miso Butter

Sugar snap peas are sautéed until tender and blistered, bringing their natural flavors to their fullest potential.  These sweet little morsels are then enveloped in a rich butter and miso sauce creating a wonderful juxtaposition between sweet and salty.  The miso-butter imparts a nice nutty flavor, similar to a cashew.  This vegetable dish may be simple, but it’s tastes are complex and absolutely divine. 

Start by washing, trimming and halving approximately 3 cups of fresh sugar snap peas.  Place in a hot pan that has been coated in 2 teaspoons of olive oil.  Cook the peas over medium-high to high heat, stirring occasionally to ensure even browning.  Sauté the peas for about 10 minutes until firm-tender.

In a separate bowl, mix together one tablespoon of very soft butter along with one tablespoon of miso (brown, red or white). Scoop the miso-butter into the pan and stir until the butter is melted and the sugar snap peas are well coated.  Serve immediately.

Ingredients

  • 3 cups sugar snap peas
  • 2 tsp olive oil
  • 1 tbsp miso paste
  • 1 tbsp unsalted butter

Instructions

  • Wash, trim and halve the sugar snap peas. Add to a hot pan that is coated in 2 teaspoons of olive oil. Sauté the sugar snap peas over high heat for about 10 minutes or until nicely blistered and fork-tender.
  • While the peas cook, mix together the butter and miso. When the peas are well blistered and tender, scoop the butter into the peas and stir until the butter is melted and the peas are well coated.
  • Serve immediately.
