Blueberry Peach Iced Tea

My Blueberry Peach Iced Tea is the drink you need this summer.  Slightly sweet and fruity, this drink is far from the standard, syrupy sweet tea that I grew up drinking in Mississippi.  It’s thirst-quenching and absolutely refreshing; the perfect alternative to a cocktail on a hot summer evening. But having said that, a bit of vodka added to this tea would be super delicious too.  So, tailor this tea to suit your desires.  Isn’t that what adulting is all about after all?  

To make, pour 7 cups of cold water into a large pot.  Add five black tea bags, 1½ cups of peeled and chopped peaches (about three medium-sized peaches) and 1½ cups of blueberries.  Bring the contents to a boil, then remove the pot from the heat, cover and allow the tea and fruit to steep for 10 minutes.

After 10 or so minutes, remove the tea bags from the pot, muddle the fruit to release any remaining juices from the peaches and blueberries, then strain the tea through a fine-mesh strainer and into a very large pitcher.  Stir in ⅓ cup of maple syrup, and refrigerate the tea until cold.  To serve, pour the tea into glasses filled with plenty of ice and garnish with a slice of peach.  Enjoy!

Instructions

  • Bring the contents to a boil, then remove the pot from heat, cover and allow the tea and fruit to steep for 10 minutes.
  • Remove the tea bags from the pot, muddle the fruit, then strain the tea into a very large pitcher. leaving the fruit remnants behind.
  • Stir the maple syrup into the tea, then refrigerate the tea until cold.
  • To serve, pour the tea into glasses filled with plenty of ice. Garnish with a slice of peach if desired. Enjoy!
