Peach Crisp

Nothing says tradition more than my Peach Crisp. This recipe is classically flavored, bringing back all those warm and fuzzy feelings and memories of summers past. It’s a simple recipe too and a great dessert to make with kids, building new memories and happy times together as a family in the kitchen.  And, because this crisp comes together quickly, and allows kiddos to get a little messy, it’s sure to be a hit. They’ll love digging their little hands into the bowl of oats, flour, sugar, spices and butter, mixing the crumb topping while you peel and slice the peaches. This crisp is easy and fun to make and absolutely delicious…a recipe that celebrates not only family, but summertime traditions too.

To start, preheat the oven to 350 deg F.  Butter a 10-inch cast iron skillet and set aside. Next, wash, peel and slice 5½ cups of peaches (about 10 medium-sized peaches) and place in a large bowl.  Add ⅓ cup of cornstarch, ½ cup of sugar, the juice of half a lemon, 1 teaspoon of cinnamon and ¼ teaspoon of salt to the peaches and gently stir.  Pour the peaches into the cast iron skillet and set aside.

In a separate large bowl, add 1 cup of oats, 2 tablespoons of hemp hearts, ⅓ cup of flour, ¼ teaspoon of salt, 1 teaspoon of cinnamon, ¼ teaspoon of nutmeg and 3 tablespoons of brown sugar.  Stir to combine, then add ¼ cup of softened butter.  Using your hands (or your kiddo’s hands!), work the butter into the oat mixture until the dry ingredients are coated in butter and moist.  Sprinkle the crumb topping overtop of the peaches, then pop the skillet into the oven to bake for 30 minutes or until the peaches are bubbly and the crumb topping is golden brown.  Allow the crisp to cool before serving.  Enjoy!

Ingredients

  • cups (~10 medium) peaches, peeled and sliced
  • cup cornstarch
  • ½ cup granulated sugar
  • juice from half a lemon
  • 1 tsp cinnamon
  • ¼ tsp kosher salt

Crumb Topping

  • 1 cup quick oats
  • 2 tbsp hemp hearts
  • cup all-purpose flour
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 3 tbsp brown sugar
  • ¼ cup butter

Instructions

  • Preheat the oven to 350°F. Butter a 10-inch cast iron skillet and set aside.
  • In a large bowl, gently mix the peeled, sliced peaches together with the cornstarch, sugar, lemon juice, cinnamon and salt. Pour the peaches into the prepared skillet and set aside.
  • In a separate, large bowl, mix together the oats, hemp seeds, flour, salt, spices and sugar. Using your hands, work in the soft butter until the dry ingredients are coated and moist.
  • Scatter the crumb topping over the peaches, then pop the crisp into the oven to bake for 30 minutes or until the peaches are bubbly and the crisp topping is golden brown.
  • Allow to cool before serving. Enjoy!
