Caramelized Onion Dip

Walla Walla sweet onions are in season and that means one thing…my Caramelized Onion Dip. This dip is sweet, savory and absolutely delicious; a great way to celebrate the official vegetable of Washington State and what I consider the best onion around (sorry Vidalia). For those that have never tried one, Walla Walla sweet onions are a very mild onion. They taste sweet and have a lower sulfur content than ordinary onions. Less sulfur means less bite and no tears. But wait, you still have tears? Those must be happy tears, ‘cause this dip is that good.

To make, start by chopping 1-2 large Walla Walla sweet onions.  You are looking for 4 cups of chopped onion in total.  Heat up 2 tablespoons of olive oil in a large frying pan and add the chopped onions to the pan along with ½ tablespoon of granulated sugar and one teaspoon of kosher salt.  Sauté the onions over medium-low to low heat for one hour, stirring the onions occasionally.  Don’t rush this process.  Enjoy the sounds and smells of those onions cooking.  Relax. When a deep golden brown color is reached, remove the onions from the heat and into a glass bowl. Cool the onions in the refrigerator completely.  

Caramelized Onions

Once cooled, add the caramelized onions to a food processor along with ½ teaspoon of dried dill, ½ cup of mayonnaise, ½ cup of Greek yogurt and ¼ teaspoon of black pepper.  Pulse the ingredients until the desired consistency is reached.  Some like this dip smooth, while others like it with texture.  You do you.  Serve this dip with raw vegetables, potato chips or overtop baked potatoes.  Enjoy!

Ingredients

  • 2 tbsp olive oil
  • 4 cups chopped Walla Walla sweet onion
  • ½ tbsp granulated sugar
  • 1 tsp kosher salt
  • ½ tsp dried dill
  • ½ cup mayonnaise
  • ½ cup Greek yogurt
  • ¼ tsp black pepper

Instructions

  • Heat up 2 tablespoons of olive oil in a large skillet. Add onions, sugar and salt to the pan and cook the onions over low heat for one hour until a rich golden color is achieved.
  • Remove the onions from the pan and cool in the refrigerator completely.
  • Once cooled, add the onions to a food processor along with the dill, mayonnaise, Greek yogurt and pepper. Process until the desired consistency is reached.
  • Serve this dip with raw vegetables, potato chips or on top of baked potatoes. Enjoy!
