Banana Bread

I know, I know…there are like one million banana bread recipes out there. And sure, this recipe is certainly fairly traditional, but I’ve been on a comfort food kick all week, so of course I had to post one of the most comforting and familiar recipes that I know…good ole Banana Bread. This bread is moist, tender, sweet and satisfying.  It’s got a crunchy sugar lacquer on top, which is absolutely fantastic…great with coffee and the perfect after-school snack for Drew. Whenever I make a batch, my Banana Bread lasts at best two days. It’s so delicious, easy to make and as comforting as a soft sweater on a cold fall day. I just love it and I think you will too. 

To start, preheat an oven to 350 deg F. Grease an 9”x3” baking pan with butter and set aside. Smash 4 ripe bananas into a medium-sized bowl with the back of a fork until creamy.  Next, whisk in two eggs, one teaspoon of vanilla, one stick (½ cup) of melted butter and ½ cup of granulated sugar.  In a separate, larger bowl, add 1 teaspoon of cinnamon, ¼ teaspoon of nutmeg, ½ teaspoon of salt, ½ cup of all-purpose flour, 1 cup of whole wheat flour, 1½ teaspoons of baking powder and ½ teaspoon of baking soda.  Mix to combine.  Add the wet ingredients to the wet ingredients and mix until just combined. 

Pour the batter into the prepared baking pan and sprinkle the top of the bread with 1½ tablespoons of coarse sugar. Bake the banana bread for 50-60 minutes or until a toothpick inserted into the center of the bread comes out clean.  Allow the bread to cool in the pan for 5 minutes.  It should pull away from the pan while it cools.  Run a knife around the edges of the bread, if needed to release it from the pan then tip the bread out onto a wire rack to cool completely.  I love this bread thickly sliced and slathered with a nice layer of peanut butter.  What a great snack!  Enjoy.

Ingredients

  • 4 ripe bananas
  • 2 eggs
  • 1 tsp vanilla
  • ½ cup (one stick) melted butter
  • ½ cup granulated sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp kosher salt
  • ½ cup all-purpose flour
  • 1 cup whole wheat flour
  • tsp baking powder
  • ½ tsp baking soda
  • tbsp coarse sugar

Instructions

  • Preheat the oven to 350° F.
  • Grease a 9"x3" baking pan with butter and set aside.
  • In a medium sized bowl, mash the bananas with the back of a fork until creamy.
  • Whisk in eggs, vanilla, butter and sugar.
  • In a separate, larger bowl, add cinnamon, nutmeg, salt, flours, baking powder and baking soda. Mix to combine.
  • Add wet ingredients to the dry ingredients and mix until just combined. Pour the batter into the prepared pan and sprinkle the top with 1½ tablespoons of coarse sugar.
  • Bake the bread for 50-60 minutes or until a toothpick inserted into the center of the bread comes out clean.
  • Allow the bread to cool for 5 minutes in the pan, then tip the bread out onto a wire rack to cool completely.
