Baked Pumpkin Oats

Egg-free, dairy-free and utterly delicious. My Baked Pumpkin Oatmeal is full of healthy oats, pumpkin seeds and pumpkin purée for a nutrient and fiber-rich meal. This fall-inspired breakfast is warm and hearty and will keep you going all morning long. So tuck in and enjoy these nourishing autumn-inspired oats. You will love them!

To make, preheat an oven to 350°F. In a large bowl, mix together 3 cups of quick oats, 1 teaspoon of cinnamon and a ¼ teaspoon each of nutmeg, ground ginger and clove. Add 2 teaspoons of baking powder, ¼ cup of pumpkin seeds, ½ cup of brown sugar and a pinch of salt to the dry ingredients and stir until well mixed.

In a separate bowl, whisk together a ½ cup of pumpkin purée, 1 cup of almond milk, 1½ teaspoons of vanilla and 3 tablespoons of olive oil. Pour the wet ingredients into the dry ingredients and mix until just combined.

Baked Pumpkin Oatmeal Wet Ingredients

Grease an 8″ x 8″ glass baking pan with olive oil and tip the oat mixture into the pan. Spread out evenly. Bake the oats for 45 minutes or until golden brown. Allow the baked oatmeal to cool slightly before slicing.  Serve each slice of Baked Pumpkin Oatmeal with almond milk and maple syrup. Enjoy!

Ingredients

  • 3 cups quick oats
  • 1 tsp ground cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp ground clove
  • 2 tsp baking powder
  • ¼ cup pumpkin seeds
  • ½ cup brown sugar
  • pinch of kosher salt
  • ½ cup pumpkin puree
  • 1 cup almond milk
  • tsp vanilla
  • 3 tbsp olive oil

Instructions

  • Preheat the oven to 350°F.
  • In a large mixing bowl, combine the oats, spices, baking powder, pumpkin seeds, brown sugar and salt. Set aside.
  • In another bowl, whisk together the pumpkin puree, almond milk, vanilla and olive oil.
  • Add the wet ingredients to the dry ingredients and mix until just combined.
  • Grease an 8"x 8" glass pan with olive oil then pour the oat mixture into the pan, spreading the mixture out evenly.
  • Bake the oats for 45 minutes or until golden brown.
  • Allow the baked oatmeal to cool slightly before slicing into squares. Drizzle the baked oatmeal with a bit of almond milk and maple syrup. Enjoy!
