Golden Milk Chia Pudding

A little bit spicy and a ‘lotta bit creamy, this Golden Chia Pudding is sure to fill your senses and your belly, while boosting your health too. This pudding is loaded with chia seeds that are packed full of omega-3 fatty acids, minerals and soluble fiber. The spices used in this pudding are wonderful for your health too. The turmeric is full of antioxidant and anti-inflammatory compounds that can help to ease depression and pain from arthritis, while the ground cinnamon has anti-viral, antifungal and antibacterial properties. So not only is this pudding delicious, it’s nurturing too.  A perfect treat to combat the start of cold and flu season. 

To make this pudding, you will need a glass mason jar or similar container that has a tight-fitting lid.  Add 4½ tablespoons of chia seeds to the jar along with 12 ounces of almond milk, ¾ teaspoon of turmeric powder, ¼ teaspoon of ground cinnamon, ⅛ teaspoon of black pepper, ½ teaspoon of pure vanilla extract and 3 tablespoons of maple syrup.  Screw the lid onto the jar and shake vigorously until the chia seeds are mixed throughout the almond milk.  Place in the refrigerator for 15 minutes.  After 15 minutes, take the jar out of the refrigerator and shake again to break up the chia seeds, as they will want to clump together.  Place the jar back in the refrigerator and allow the chia seeds to absorb the almond milk and expand overnight or for at least four hours. This recipe makes two servings.

Ingredients

  • tbsp chia seeds
  • 12 oz unsweetened almond milk
  • ¾ tsp tumeric
  • ¼ tsp ground cinnamon
  • tsp black pepper
  • ½ tsp vanilla extract
  • 3 tsp maple syrup

Instructions

  • Pour all the ingredients into a pint-sized glass jar with tight-fitting lid. Shake to combine.
  • Place the jar in the refrigerator for 15 minutes, shake again and then let the pudding set up for at least 4 hours or overnight.
  • Stir before serving and enjoy. This recipes makes 2 servings.
