Apple, Beet and Ginger Juice

A great little pick-me-up on a busy afternoon, my Apple, Beet and Ginger Juice has the perfect amount of sweetness and spice to get you through your day. This beautiful dark crimson juice is loaded with nutrients and minerals, including folate from the beets, vitamin C from the apple, vitamin E and magnesium from the spinach, and antioxidants from the ginger.  This is a full-meal deal, all in one glass!  It will leave you nourished and satisfied.  A much better alternative to a cup of late afternoon coffee!

To make, core and chop one apple and add it to a blender along with 1 peeled and chopped beet, a thumb-sized piece of peeled fresh ginger, a handful of baby spinach and 1½ cups of cold water.  Blend the mixture until smooth.  Using a milk nut bag (like this one) or a cheese cloth, strain the juice from the pulp.  Discard the pulp and enjoy the fresh juice.  Cheers to good health!

Ingredients

  • 1 apple, cored and cubed
  • 1 beet, peeled and cubed
  • 1 thumb-sized piece of fresh ginger, peeled
  • 1 handful of baby spinach
  • cups cold water

Instructions

  • Place all ingredients into a high-powered blender. Blend until smooth.
  • Using a nut milk bag or cheesecloth, strain the pulp from the juice. Discard the pulp and enjoy the juice. Yum!
