Tender baked apples are stuffed with ginger snap cookies, brown sugar, cinnamon and butter for a warm and cozy fall dessert that the whole family will love. Top these Baked Apples with vanilla ice cream and dive in. Autumn has never tasted so good! 

Coring out Apples for baked apples

Wash and cut the tops off of 4 apples just like you would when carving a pumpkin. Using a spoon, scoop out the apples seeds and core and discard. Fill the cavity of each apple with a few crumbled ginger snap cookies, 1½ teaspoons of brown sugar, a pinch of cinnamon and ½ tablespoon of butter. Place the apples in an 8”x8” glass baking dish and bake the apples at 350 deg F for 45-50 minutes or until tender. Top each apple with a large scoop of vanilla ice cream and enjoy! Such a simple and absolutely delicious dessert!

Ingredients

  • 4 large apples
  • 12 ginger snap cookies, divided
  • 6 tsp brown sugar, divided
  • 1 tsp ground cinnamon
  • 2 tbsp butter, divided
  • vanilla ice cream

Instructions

  • Preheat the oven to 350°F.
  • Wash 4 apples and cut the tops off the apples like you would a jack-o-lantern. Scoop out the seeds and core of each apple.
  • Crumble ginger snap cookies into each apple, filling the cavity of each apple to the top.
  • Sprinkle over 1½ teaspoons of brown sugar and a pinch of cinnamon.
  • Top each apple with ½ tablespoon of butter.
  • Place the stuffed apples into an 8"x8" glass baking dish. Bake the apples for 45-50 minutes until tender and fragrant.
  • Top each apple with a large scoop of vanilla ice cream and serve immediately. This recipe makes 4 servings.
