Green Beans with Garlic and Almond

My Green Beans with Garlic and Almond are simple enough to make on a weeknight yet elegant enough to serve at any holiday meal. Tender-firm and perfectly seasoned, these green beans are a far cry from the canned variety. 

To start, wash and trim 1½ pounds of fresh green beans.  Place the green beans in a resealable plastic bag along with 3 tablespoons of olive oil, 3 cloves of minced garlic and 1½ teaspoon of kosher salt. Chop ⅓ cup of raw almonds and add to the beans. Seal the plastic bag, shake and mix the ingredients together, then pop the bag in the refrigerator and allow the beans to marinate for at least one hour (or for as long as a day).  

When ready to cook, heat a skillet over high heat. Dump the beans into the pan and sauté until sufficiently charred. Add ⅓ cup of cold water to the pan, cover immediately, and steam the beans until the water has evaporated, about 3-4 minutes. Taste the beans, add more salt if desired and serve immediately.

Ingredients

  • lbs fresh green beans
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • tsp kosher salt
  • cup raw whole almonds
  • cup cold water

Instructions

  • Wash and trim the green beans and add to a resealable plastic bag along with the olive oil, minced garlic and salt.
  • Finely, but haphazardly chop the raw almonds with a knife. Add to the bag of beans.
  • Seal the bag and massage the beans, mixing all the ingredients together. Store in the refrigerator to marinate for at least one hour or as long as overnight.
  • When ready to cook, heat a skillet to high heat. Add the contents from the bag to the hot pan and stir the beans continuously until nice and charred.
  • Add ⅓ cup of cold water to the pan, immediately cover the pan, and steam the beans until all of the water has evaporated. Serve the beans immediately. Enjoy!
